11-13-2025 – Saison. Chef. Racing Sims.

Last night I fell asleep for about 3 hours and I woke up at around 11pm. Still having issues sleeping. It’s not comfortable to me. I don’t enjoy the process of falling asleep, but I enjoy sleeping in. When I lay down to sleep, I usually roll around for a bit, and my eye lids start straining from all the forced eye-closing I have to endure.

I woke up in my office chair. Didn’t feel the least bit tired when I woke, so I said “fuck it” and stayed awake until I had to attend 3 classes the day after.

I hit a second wind around noon, and after I finished my final class I decided I might as well go socialize so I headed down about 300 ft to a brewery conveniently located in my neighborhood.

Is/Was brewery was just named the 8th best saison reader’s choice by Caft Beer & Brewing magazine. Kind of crazy something that is a “top 10” best in the world of something is located a few steps from my house.

I walked in and chatted with the head Chef of Xicago Cevicheria, a local pop up making rounds in the city. “You know that beer pairs well with our quesadilla,” he told me as I sipped on my oyster beer (seriously, see attached image below.) I told him that I might grab a bite later, but to be honest I’m really just skeptical of Mexican food in Chicago. After talking for about 30 minutes, I learned he lived in San Diego for awhile. I wasn’t so skeptical knowing this information, so I ordered the quesadilla. It was good, although, a quesadilla is a quesadilla, no matter how much effort you put into trying to transcendent beyond just that. In hindsight, I should’ve tried the tacos.

It got busy, so he left to go cook.

He was speaking to a friend of his who was there to pitch his own pop up, although, his pop up was not food related. His friend’s pop up was a racing simulator. You ever see those racing nuts that build a whole rig just to play a racing video game? Yes that kind of racing simulator.

“So, you built a portable racing sim rig? That’s crazy.”

“Uh, it’s not portable.”

“Oh… huh…”

“I know, it’s a lot of work. I have to rent out a Uhaul and I have someone else with me, and he helps me carry it in…”

“…”

“It’s a lot of work.”

He left to go pitch his idea with the bar manager. When he returned, I wished him luck, and told him I was rooting for him.

Ambitious people inspire me. They really don’t give a shit.
